After a huge dump of snow this week we needed a good home-made soup and there was a Butternut squash sitting on the kitchen counter calling my name. This Butternut Squash soup is thick, creamy and so easy to make. I had both the soup and the Cheese Biscuits made in the time it took my husband to shovel his way out the back door and snow blow the driveway! Now depending on the size of your driveway and how deep the snow is will determine who wins this race. I had it all done in an hour and 20 minutes.

Tosca Cake
This delectable Tosca cake recipe comes from a Finnish friend of mine who used to bring Tosca cake to all of our potluck dinners. It was a family favourite of hers which had been passed down from her grandmother to her mother. I was lucky in that she shared the recipe with me. I have made it multiple times over the years for important family events. Every time I make Tosca cake it reminds me of my bubbly friend Maritta, who unfortunately passed away 20 years ago. Looking at the recipe in her handwriting when I am making it brings back wonderful memories of all of the laughs we had together.
No-Knead Country Bread
This recipe for No-Knead Country bread has turned my bread baking world upside down! When I first saw this recipe I thought why would anyone bake bread in a pot? But after trying it I can definitely see why and I am quite sure I will continue doing it for years to come. It is such a wonderful bread I am going to see if I can find a rectangular covered pot so I can make an actual loaf shape – not that there was anything wrong with the round loaf. But it does make for a good excuse to buy another cast-iron pan.
Date Orange Loaf
This Date Orange Loaf is another great recipe to make during the cold winter months when fresh local fruit is all but a distant hazy memory. Dried dates are a great pantry staple and once they are rehydrated in fruit juice they become just delicious. When that fruit juice is freshly squeezed orange juice and the zest is added in the combination is a match made in heaven! This is a combination I have used in quite a few recipes and I am always trying to find new recipes to pop it into.
Lemon Crinkle Cookies
These Lemon Crinkle Cookies are an amazing lemon cookie, crispy on the outside and chewy on the inside. Even on day 2 the cookies are still crispy – yummy! They are full of lemon flavour – there is lemon zest and lemon juice in the ingredients. The recipe takes no time at all to mix together and only 11 minutes of baking time- you can’t make a batch of cookies much quicker than that.
