Gingerbread Biscotti

Gingerbread Biscotti the perfect combination of the flavour of gingerbread cookies and the crunch of biscotti. If you love the spices of gingerbread – ginger, cinnamon and nutmeg – you are in for a treat with these biscotti. The addition of molasses gives the traditional dark caramel colour of gingerbread and the white chocolate chips make little indents of melted goodness.

I made these cookies to get myself in the swing of the holiday baking season. I love gingerbread, but wasn’t quite in the mood for making gingerbread cookie dough,rolling out and cutting out the shapes for gingerbread. The smell of these cookies baking had me in the Christmas spirit in no time. Sitting down with a nice cup of coffee or hot chocolate for dunking and you have the perfect evening treat to enjoy after a hard day of shopping or decorating.

Cranberry Pistachio Biscotti

These Cranberry Pistachio Biscotti are a perfect addition to your holiday cookie list – they even have the holiday colours of green and red studded throughout! Be prepared though, if you make them now they probably won’t last long and you will find yourself making another batch before the holiday even arrives. Biscotti go so well with a cup of coffee or tea, or even hot chocolate if you are the dunking type. They are not a very sweet cookie, so the flavour of the pistachios and cranberries really shine through.  The orange zest highlights the cranberry even more.

Traditional Shortbread

Well it is that time of year…holiday season and that means Shortbread cookies!  Traditional Shortbread is my absolute favourite cookie. The recipe lends itself to versatility. In my opinion for traditional shortbread you can use whatever type of sugar strikes your fancy. For this particular batch I had the luxury of using maple sugar. Maple sugar is made from pure maple syrup. All of the water is removed and tah dah you have maple sugar! This maple sugar is from a local sugar bush called Sucrerie Seguin in the little northern hamlet of Lavigne.

Peanut Butter Cookies

Peanut Butter cookies are a classic cookie that everyone should have in their cookie repertoire. This is a cookie you can mix up with everyday ingredients and enjoy for dessert on a weekday.  I have fancied this classic cookie up with a little drizzle of white chocolate.  The white chocolate gives a little extra layer of flavour, but it is definitely optional as they are just as delicious plain.

Spiced Shortbread

The cool days of autumn call for spices to warm up our food and drink. Cinnamon and ginger have hints of heat and they pair beautifully in baked goods.  So why not add these spices to shortbread? Surely they could only make my favourite cookie even better. This basic shortbread is made with just a wooden spoon so there is even some exercise worked into recipe – which means the first 2 cookies are calorie-free.

Raisin Cinnamon Oatmeal Cookies

Another oatmeal cookie recipe, really do I need to keep trying different ones?  The answer – YES!  Even when you think you have the perfect oatmeal cookie recipe you always wonder, what if…..So that question is what has brought us to this cookie recipe.  After making the cookies with the ground pecans, I started to think about what other ingredients I could grind up to enhance the flavour. So why not grind up the oatmeal and make almost an oat flour. Out came the food processor again and sure enough, it worked!

Pecan Toffee Cookies

Cookies….such wonderful little things…small packages with immense flavour. There are so many recipes  for cookies how would it be possible to make them all in one lifetime. Sometimes you get lucky and try one of those combinations that seem like it might be a great idea and it turns out that is was an absolutely fantastic idea.  That is what happened with this recipe.  I was reading a recipe that used ground pecans as a coating on a cookie and thought hmmm what about in the cookie?  So then the experimenting began. I started with my standard shortbread recipe and substituted part of the flour for ground pecans.

Saturday Sprinkles

Today I had a young visitor for the afternoon and this lovely young lady insisted that we bake something!  So Frosted Sugar Cookies were definitely in order. So while her Mom did her shopping, Ella and I were very busy decorating cookies.  I was only allowed to put the frosting on while Ella was in charge of sprinkles.  Now when a 7 yr old little girl is put in charge of sprinkles you can only guess what happened….SPRINKLES EVERYWHERE!!!

There were many bottles of sprinkles retrieved from the cupboard and it was determined that the thicker the layer of sprinkles, the better the cookies would taste. Sprinkles should also be combined in as many colour combinations as possible, just in case you were wondering. Those little hands could sure move fast…she was sprinkling as fast as I could spread the frosting.

Now I have posted these Frosted Sugar Cookies before, but they definitely have their party clothes on today. Click here to get the recipe. Today I added some lime zest along with the lemon zest and they were definitely fruity. Also the icing was coloured with a 2 crushed raspberries- nice natural colouring.

Triple Crown Cookies

My son, Matthew, was heading to our camp for the weekend with friends and I wanted to send them off with some goodies.  I didn’t have much time but there was butter softened on the counter so I decided cookies would be the fastest treat to put together.  Then I couldn’t decide what kind to make so I used my base cookie dough and added a little bit of everything that was in the cupboard.

The combination of all of those different chocolates and flavours smelled just heavenly.  The cookies were cooled and packaged and off the boys went.  I had kept a few for my husband just so that there wouldn’t be a riot. He thought the taste was amazing, but one problem they had no name.  So as he is stuffing the last bite in he says “triple crown”. So the Triple Crown Cookie was born, even though technically they have 4 flavours in them…oh well…

So if you need some cookies last minute, these really are quick to throw together and feel free to add whatever type of chocolate chips you have on hand. Maybe your combination will be even better than mine.

 

Triple Crown Cookies

Serves: 3 dozen
Ingredients
  • 1 c. butter, room temp
  • ¾ c. granulated sugar
  • ¾ c. packed brown sugar
  • 1 egg, room temp
  • 1 tsp vanilla
  • 1 tsp baking soda
  • ½ tsp salt
  • 2½ c. all purpose flour
  • ½ c. milk chocolate chips
  • ½ c. peanut butter chips
  • ½ c. white chocolate chips
  • ¼ c. caramel pieces (Skor bits)
Instructions
  1. Preheat oven to 375 ℉. Line 3 baking sheets with parchment paper.
  2. Beat butter and sugars together until light and airy using an hand mixer or stand mixer.
  3. Beat in egg and vanilla.
  4. In a separate bowl, whisk together the baking soda, salt and flour.
  5. Add to butter mixture all at once. Mix on low just until incorporated.
  6. Add in all of the chocolate chips and caramel bits. Mix just until combined.
  7. Using a large scoop, scoop balls onto parchment. Place at least 2" apart - 12 to a sheet.
  8. Flatten slightly with the heel of your hand.
  9. Bake 10-12 minutes or until golden. Let rest on pan a few minutes before sliding onto a rack to cool.

Glazed Citrus Shortbread

Shortbread for the summer season? Yes!!!  Shortbread and all it’s variations is probably my all time favourite cookie.  I have added just about everything to this cookie dough at the Christmas season- chocolate, butterscotch, white chocolate, nuts and even dried fruit. But with the addition of lime and lemon zest to the dough and a lime and lemon glaze the result is a refreshing little bite sized treat- just perfect for those summer barbeques.
