I love creamsicles and these cookies are reminiscent of that refreshing summer time treat. The orange zest and orange extract really bring the orange flavour without being overwhelming. The white chocolate chips bring the creamy texture of the ice cream to the cookie. A few of these babies with a cup of tea and you have a perfect afternoon break. Add a cup of milk and your bed-time snack is calling.

Oatmeal Raisin Cookies
Oatmeal cookies are one of my favourites, especially if they have raisins and lots of cinnamon in them and you have a nice cup of tea for dunking of course. I prefer them a little on the crunchy side, but the rest of the family prefers soft and chewy, so that is how I bake them. This cookies makes a wonderful sweet treat to add to lunches and with the oatmeal and raisins there is a little goodness packed in each one.
Frosted Sugar Cookies
Sugar cookies with a hint of lemon layered with a thick topping of butter frosting – that says YUM! My dad said they tasted like cupcakes in a cookie, I think he is right.
These cookies have very simple ingredients but put together they make something simple taste soft and delicious. I prefer to roll the dough into a log and wrap in plastic wrap and let the flavours meld together for a while in the fridge before I bake them. The dough for this batch was actually refrigerated for 2 days before I baked them. It makes it easy to then just slice and bake, no rolling, no scooping, no rolling balls – just easy slicing.
Chocolate Chip Cookies
Chocolate Chip cookies are one of those things everyone has an opinion on. Do you like them chewy, crispy, or cakey? From all of the chocolate chip cookie recipes I have ever tried this one is by far my family’s favourite. My husband is of the opinion that the daily quota of 4 that I impose on him is just not enough!
