Chocolate Cupcakes with Raspberry Frosting

Well my father-in-law turns 94 this week and when I asked what kind of cake he wanted for his birthday the answer was chocolate, so chocolate it is! Can you image 94 and still in relatively good health and he has all of his wits about him. He has been retired for more years than he worked, which is a feat in itself that is definitely worth celebrating. Something we can all strive for in our retirement years…just have to get there first.

So today to celebrate Ernie’s 94th and Canada Day as well we had Chocolate Cupcakes with Raspberry Frosting.

Lime Custard Pie with Whipped Cream

Lime pie is one of my favourite pies…..it is refreshing and any dessert with whipped cream on top is a wonderful thing. I had never made a  lime pie before but on the last trip to Costco they had bags of limes and seeing as though guacamole had been requested, limes were on the shopping list.  Now what to do with all of those extra limes?  Lime pie of course!

Angel Food Berry Trifle

My son Matthew’s idea of a birthday cake is not your traditional take on birthday cake – he prefers Trifle! Considering his birthday is in June it is the perfect time of year for a trifle.  Berries are just coming into season – not so much local, but at least berries that taste almost like a berry instead of cardboard. So this year was no different and trifle was requested again!

Orange and White Chocolate Cookies

I love creamsicles and these cookies are reminiscent of that refreshing summer time treat.  The orange zest and orange extract really bring the orange flavour without being overwhelming. The white chocolate chips bring the creamy texture of the ice cream to the cookie. A few of these babies with a cup of tea and you have a perfect afternoon break. Add a cup of milk and your bed-time snack is calling.

Oatmeal Raisin Cookies

Oatmeal cookies are one of my favourites, especially if they have raisins and lots of cinnamon in them and you have a nice cup of tea for dunking of course.  I prefer them a little on the crunchy side, but the rest of the family prefers soft and chewy, so that is how I bake them. This cookies makes a wonderful sweet treat to add to lunches and with the oatmeal and raisins there is a little goodness packed in each one.

Butter Tarts

Butter tarts are pure decadence wrapped up in individual parcels. One is usually enough to satisfy that sweet craving without leaving you feeling guilty for having indulged.  There is always room for a butter tart….Do you like yours plain,with raisins or with pecans?  My preference is raisins, but I am beginning to like the pecan version as well.

Rhubarb Pecan Loaf

Well this is the third post that is all about rhubarb! We haven’t tired of eating it yet, so there may still be more to come. I hope you love rhubarb as much as we do!

The batter for this loaf comes together quickly and no mixer required, so you can make it quietly in the morning and pop it in the oven so your family wakes up to the smell of rhubarb and cinnamon.  A few slices and a cup of coffee starts a morning off perfectly.

Rhubarb Crumble Muffins

The next rhubarb recipe is Rhubarb Crumble Muffins…delectable parcels of tangy goodness with brown sugar crumble on top…yummy!  This is happiness tucked inside a muffin. You will be hard pressed to stop at one after devouring this morsel.

The recipe itself is very similar to the Rhubarb Coffee Cake, so it is quick and easy to mix together. One of the differences is the spice cardamon that is in the batter. It gives a little spark to the taste. Before you know it the smell of fresh muffins will be wafting out of your oven.

Rhubarb Coffee Cake

There is nothing that says Spring more than Rhubarb Coffee Cake!  When those little shoots pop through the earth, then the leaves appear, then a week or two later it’s harvest time.  My rhubarb plant is in a spot where it gets the sun all day long and it just loves it. It grows so fast that I can usually pick enough for a cake at least twice a week.  As long as you cut the flowering stems off you can continue to harvest it into summer or until you get tired of rhubarb, if that is even a possibility.

 

Once summer comes and the strawberries are ripe then it is time for strawberry rhubarb pie and strawberry rhubarb crisp and the list goes on.  But back to the rhubarb coffee cake as I am getting way ahead of myself- it is at least 5 weeks until strawberries are even a possibility here in Northern Ontario!
