Chocolate Sugar Cookies are the perfect cookie treat for the chocolate lover for Valentines Day. These chocolate cookies are like a brownie in cookie form- very chocolaty. Did I already mention they were very chocolaty? They also make a great cookie for making cut-out cookies as the dough firms up nicely once cooled and keeps it’s shape once baked.
I sprinkled some with pink coarse sanding sugar for a not too sweet topping, but you could also frost them with butter frosting or royal icing if you want to get fancy. If you wanted to add more chocolate flavour I think they would be very beautiful drizzled with some melted white chocolate. Any way you decide to decorate these cookies those chocolate folks in your life will be very appreciative of your efforts♥.
- ¾ cup all-purpose flour
- ½ cup cocoa powder
- ¼ tsp fine salt
- ½ cup butter, room temp
- ½ cup white sugar
- 1 egg
- ¼ tsp vanilla
- In a small bowl sieve together the cocoa and flour, add in salt and whisk together.
- In the bowl of a stand mixer cream together the butter and sugar.
- Once it is creamy, add in the egg and vanilla. Mix again until well incorporated, scraping down the sides of the bowl at least once.
- Turn off the mixer and add in the flour mixture all at once.
- Mix on low speed until incorporated.
- Transfer dough to a piece of plastic wrap. Flatten and seal well, refrigerate at least 1 hour.
- Preheat oven to 350 degrees F.
- Roll out dough between 2 sheet of lightly floured parchment paper to ¼" thick.
- Cut out to desired shapes and transfer to parchment lined baking sheet.
- Bake 10-12 minutes, just until firm on the edges. Let firm up on baking sheet before transferring to cooling rack to cool completely.
