Citrus Ricotta Cookies

Citrus Ricotta Cookies are fluffy and almost cake-like and then with the addition of a citrus glaze they are almost mini-cupcakes! If you aren’t sure about using ricotta cheese in cookies believe me you won’t taste the cheese, it just gives a very rich and fluffy texture. I used both lime and lemon zest in this recipe but you could just use one of the other or even any type of orange. Change it up and try and them all. That is what I like to do with recipes, change them up. My son gets quite irate with me when I change the add-ins from the original especially if he really liked it.

But life is all about change and recipes are the perfect vehicle for making changes where you might discover something grand! And on the flip side if the end product doesn’t quite turn out the dog might just get a great treat that day. Dogs always appreciate any kitchen failures. But if you stick to changing flavours and add-ins you just never know what you will come up with. So enjoy playing with all types of citrus zest and citrus glaze in this recipe.

Ingredients
  • ½ cup salted butter, room temperature
  • 1 cup granulated sugar
  • zest of 1 lime
  • zest of 1 lemon
  • 1 cup full-fat ricotta cheese
  • 1 egg, room temperature
  • ½ tsp vanilla
  • 2 cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¼ tsp baking powder
Instructions
  1. Preheat oven to 350 degrees F.
  2. Beat butter, sugar and zest together with a hand mixer until fluffy.
  3. Add in the egg and vanilla, beat again until well incorporated. Add in the ricotta cheese and beat until incorporated.
  4. In a separate bowl whisk together the flour, salt, baking soda and baking powder. Stir into butter mixture with a wooden spoon until all of the flour is mixed in.
  5. Using an ice-cream scoop form balls and place 12 to a cookie sheet. Dip a fork in cold water and flatten the dough balls slightly.
  6. Bake 12-14 minutes or until bottoms are just lightly browned. Let cool on cookie sheet then transfer to a cooling rack to cool completely.
