So it is a Saturday morning at the lake and you have your niece and nephew visiting and it is already 25 ºC outside and they expect some home baking for breakfast – what do you do? Well you could make muffins that tastes just like a donuts. Yes, that really is something you can do! The oven won’t be on too long and if you bake them nice and early you won’t melt. At least that is what I tried to tell myself! A swim afterwards will help.
This recipes comes together in a snap and it is the combination of spices that will trick you into thinking you are indulging in a fried donut. If you have a lot of hungry folks feel free to double the recipe as I did because teenage boys can inhale quite a few muffins in the space of a few hours. The muffins are best served warm and dusted with icing sugar or maple sugar if you have it. You may never have to go back to the donut place again.
- ⅓ cup butter, room temp
- ½ cup granulated sugar
- 1 egg, room temp
- 1-1/2 cups all purpose flour
- 1-1/2 teaspoons baking powder
- ½ tsp salt
- ¼ tsp nutmeg
- ¼ tsp cinnamon
- ⅛ tsp cardamon
- ¾ cup milk
- icing sugar for dusting
- Preheat oven to 350℉. Lightly grease a 12 cup muffin tin.
- In a large bowl cream together the butter and sugar until light and fluffy. Add in the egg, beat again until fluffy.
- In a separate bowl whisk together the flour,baking powder,salt and spices.
- Add to the butter mixture along with the milk and stir together until well combined.
- Fill muffin tins ½ full and bake about 20-22 minutes until tops are just golden and firm to the touch.
- Remove from oven and let cool in pan 5 minutes, then remove from pan to rack to cool.
- When cool, dust with icing sugar.
